You don’t need to wait for Meatless Monday to have a delicious bean burger. As a matter of fact you don’t even have to be vegan to enjoy these.

These patties pack so much flavor they will leave you wanting seconds.

Did I mention they are super easy to make????

INGREDIENTS:

  • 2 (14 ounce) cans black beans, drained, rinsed, and patted dry ( we use SIMPLE TRUTH ORGANICS i like that they are low sodium )

  • 1 Tablespoon extra virgin olive oil

  • 3/4 cup finely chopped orange , yellow or red bell pepper 

  • 1 cup finely chopped  onion 

  • garlic cloves, minced

  • 1 1/2 teaspoons ground cumin

  • 1 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon smoked paprika

  • 1/2 cup bread crumbs 

  • 1/2 cup Mozzarella shredded - FOR VEGAN OPTION USE DAIYA MOZZARELLA

  • 1  large egg - FOR VEGAN OPTION USE FLAX EGG

  • 1 Tablespoon vegan  Worcestershire sauce

  • 2 Tablespoons ketchup

  • pinch of  pepper ( you can add salt, I don’t find it necessary)

INSTRUCTIONS:

  • Preheat the oven to 375 degrees , spread the beans evenly onto a parchment paper lined baking sheet and bake for 15 minutes. You want the beans to be slightly dry, this is how you avoid mushy bean patties.

  • while the beans are baking sauté the onion, garlic and bell peppers in a skillet coated with oil until translucent and fragrant, about 6 to 8 minutes. Do not brown the garlic. Remove from the heat and blot some of the juices and oil with a paper towel, and place in a mixing bowl.

  • Combine the rest of the ingredients and gently mash with a fork. You want everything evenly combines but make sure you don’t smash all the beans, you want to keep some texture in the patties.

  • Shape your patties using about 1/3 cup of the mixture, you will have about 7 patties.

  • place the formed patties onto a parchment paper lined baking sheet and bake at 375 for about 13 minutes per side.

  • Serve with your favorite toppings and buns. They will keep in the refrigerator for up to 5 days.
